Potato Tacos are delicious Guatemalan appetizers that are well known and are not lacking in any Guatemalan restaurant menu, made from corn tortillas and served with red tomato sauce and parsley, but they are also served with onion rings and cheese, you can also add guacamole.

When you talk about tacos, you always think of Mexico, but believe it or not, we also have tacos in Guatemala. However, Guatemalan tacos are nothing like Mexican tacos. Guatemalan tacos are usually fried and stuffed with potatoes and meat. Tacos are normally served with tomato sauce, other times they can be accompanied with guacamole (avocado sauce), chopped parsley and grated cheese.

We share with you the very simple recipe for the most traditional Guatemalan version of tacos, but despite being a traditional recipe, in each Guatemalan home you can give it a personal touch to make this unique recipe, and this personal touch is also part of the culinary tradition of Guatemala.

Ingredients for the Tacos

  • 1/2 cup chopped onion
  • 1 cup of parsley
  • 4 large potatoes, chopped into small pieces
  • 1 Chili Pepper, chopped into small pieces
  • 20 corn tortillas
  • 1/2 cup of fresh cheese
  • 1 pound ground beef
  • 1 teaspoon of oregano (fresh or dried)
  • 1 teaspoon cumin
  • 3/4 cup coriander
  • 1/4 cup of parsley
  • olive oil
  • 3 tomatoes, chopped
  • salt and pepper

Ingredients for the Salsa

  • 20 tomatoes
  • 1 large onion chopped
  • 1 minced garlic
  • pinch of coriander
  • salt and pepper

Instructions

Step 1 : Fry the chopped onion with garlic and chili pepper for 2 minutes, then add salt, pepper, oregano, cumin and fry for 1 more minute.
Step 2 : Add the chopped potato and ground beef to the mixture and continue cooking, constantly mixing the ingredients, until the potatoes are well cooked.
Step 3 : Slightly heat the tortillas to be able to fold them without breaking them, then place the filling of the mixture that we just made. Approximately 2 tablespoons of the mixture is fine.
Step 4 : Roll up the tortillas in the shape of a taco, and tie them with kitchen cord. In Guatemala, we use a thread from the corn husk to tie each taco.
Step 5 : Fry the tacos until golden brown to your liking. You can use olive oil or corn oil. We leave that to your personal taste.
Step 6 : Finally, place the tacos on an absorbent napkin to remove excess oil after frying.
Step 7 : For the sauce, just cook all the ingredients for 10 minutes and blend them in a blender machine. Once the sauce is blended, cook it again with a little bit of oil for a few extra minutes and that is done.

When serving the tacos, pour a little of the sauce on top of each one, sprinkle with a little fresh cheese and cilantro. We recommend using artisan fresh cheese, and if you like, a little bit of chilly.
