Rice is one of the most important ingredients in Guatemalan cuisine lunches. And this is the key ingredient for this recipe Valenciana Rice Recipe, a recipe of Spanish origin, but which has been transformed over the years to have a Guatemalan twist.
Rice is a very versatile ingredient and many very traditional Guatemalan recipes can be made with it. But it is important that you take into account that for this recipe, I use "yellow rice" or also known as "precooked rice". Arroz a la Valenciana is a version of Paella, but without seafood. You can add the ingredients that you prefer to add your personal touch if you wish. Now, if you prefer vegetarian food you can add mushrooms, chickpeas or eggplant instead of meat for this recipe.
Step 1 : Cut the chicken breast into small pieces, cut the chorizo into slices, put a little pepper in a bowl and set aside.
Step 2 : Place the chopped onion, minced garlic and chili pepper in a rice pan and fry with olive oil until golden, then add the rice and fry for another two minutes, finally add the chicken meat and chorizo and stir a bit for a maximum of 2 mins. This will help concentrate the flavor of the ingredients.
Step 3 : Add the rest of the ingredients except the parsley and the hard-boiled egg. Add the chicken broth and cook for 25 to 30 mins. Add more broth during cooking if necessary. Don't forget to add a little salt.
Step 4 : Remove from the heat, let it rest for about 10 minutes and it will be ready to serve. Meanwhile, cut the hard-boiled egg into slices.
Step 5 : Serve it and decorate the rice with a few slices of hard-boiled egg and parsley on top and that's it.
