Egg-wrapped cauliflower is a traditional Guatemalan dish that is usually prepared around the time of Lent and Easter. However, you can cook it at the time you like the most at any time of the year.

Ingredients

  • 1 large cauliflower
  • 1 pound of tomato.
  • 1 red chili pepper.
  • 1 onion.
  • 2 cloves of garlic.
  • 3 eggs.
  • 3 tablespoons of flour.
  • Chopped Cilantro
  • Laurel.
  • Thyme.
  • Oil.
  • Salt to taste
  • Mozzarella cheese (or any white cheese, this is optional)

Instructions

Step 1 : Clean the cauliflower, wash it and cut it into medium pieces. Then put the cauliflower to cook in a pot over medium heat with a little salt for 5 minutes. Make sure not to overcook it, as we will cook it again later. As soon as the 5 minutes have passed, remove from the heat and drain the cauliflower to remove all the water.

Step 2 : Beat the white of the eggs in a deep bowl until it reaches a frosting texture. Then add 3 tablespoons of flour, a little salt to taste and the egg yolks to unite them in an enveloping way without beating, otherwise the mixture will go down.

Step 3 : Now, cover each piece of cauliflower (previously drained) in the egg batter mixture that we just made and fry in a pan with oil.

Step 4 : Finely chop the tomato, bell pepper, onion and garlic and then fry in a pan, add salt, pepper and thyme. Boil until it becomes a slightly thick sauce, about 4 minutes.

Step 5 : Finally, place the cauliflower wraps into the sauce and boil for an additional 2 minutes.

Serve with a little chopped coriander on top to garnish, if you wish you can also add a little bit of cheese on top as a final touch, but that is optional. We recommend you to enjoy this delicious dish with a little white rice. And this completes a delicious and very traditional Guatemalan lunch or dinner.
