This is one of the classic Christmas cookie recipes, and it cannot be other than the glazed cookies, since they are not only delicious, but also the favorites of many. For this recipe, you will notice that there are a few small extra ingredients to give this recipe a Guatemalan touch. These are not the traditional Christmas cookies shaped like reindeer, trees or sleighs, but rather the classic and simple circular shape.
Step 1 : To prepare the Christmas cookies, we have to mix the butter with the sugar to form a cream-like texture. Then you add eggs, milk and vanilla essence, mix all the ingredients for a few minutes. Later you add the baking powder, lemon zest, walnuts, salt and finally the cups of flour to the mixture.
Step 2 : When the cookie dough is ready, form small balls with your hands and place them on a baking-sheet with waxed paper, cover them with wrapping film and store in the refrigerator for 1 hour.
Note : If you would like to use cookie molds, then just place the cookie dough in the refrigerator for 1 hour, then later flatten the dough before cutting with the cookie mold, or make a roll with the dough and then slice it with a knife to make perfect round cookie shapes.
Step 3 : To flatten the cookie balls, dip the base of a flat-bottomed mug or glass into flour and use that to gently press down each ball. If you used a cookie mold, then place the cookies on a backing-sheet and then place the cookies in a preheated oven and bake. We suggest 350 fahrenheit (175 celsius).
Step 4 : Bake the cookies for about 7 mins or until the edges are golden. Now cool the cookies on a wire rack completely before decorating with the glaze.
Step 5 : While the cookies cool. Mix all the ingredients for the glaze until it reaches a creamy consistency. Lightly toast the sesame seeds over medium heat and cut the crystallized fruit pieces into small pieces.
Step 6 : For the sesame seed decorated cookies: Dip half a cookie into the frosting mixture, then sprinkle the toasted sesame seeds over the cookie.
Step 7 : For the cookies decorated with the crystallized fruit: Cover the cookie inside the glaze mixture and place a small piece of crystallized fruit in the center. Remember to place the piece of fruit before the glaze hardens completely.
Note : If you would like to add a little extra color to your cookies, using a small part of the frosting mix, add some natural cooking coloring and decorate your cookies as desired.
