As in many recipes for typical Guatemalan sweets, "Higos en Miel" (Figs in Honey) is also easy to prepare, and these Guatemala Typical Candies are delicious. You can find them in any typical candy store, especially in Antigua Guatemala. But here we explain how you can do them yourself.
In some countries, figs are harvested seasonally, but in Guatemala, they are almost always available. The rest of the ingredients is very likely that you already have them at home, although you can add some extra seasoning to give it your personal touch if you wish.
There is a little trick recommended for this simple recipe ... make sure that the weight of the figs is the same weight of the sugar. It is not a rule, but rather a suggestion of the traditional Guatemalan recipe.
- 24 figs, ripe but firm
- A pinch of lime (material / referring to calcium-containing inorganic mineral )
- 1 ½ cup sugar or to taste
- 1 cinnamon stick
- 4 cloves
- 5 allspice
- Orange zest
Step 1 : First, you need to make a cross-shaped cut at the bottom of each fig.
Step 2 : Place all the figs in a container and cover them completely with water and add the pinch of lime and leave to rest for approximately 1 hour.
Step 3 : Strain the figs and place them in a pot, cover them with plain water (about 2 cups of water), boil and cook for about 15 minutes or until the figs are soft.
Step 4 : Remove from the heat and drain each fig (delicately since all figs are quite soft) until most of the liquid is removed from each fig.
Step 5 : In a pot, place the sugar, the orange zest and the other spices with two cups of water and cook over low heat until a honey or syrup comes up.
Step 6 : Finally, add to this syrup all the figs and continue cooking until the syrup is thick.
