Guatemalan potatoes “Tortitas” or “Tortitas de Papa” as known in Guatemala is a recipe very similar to other ones in Latin America. However, in Guatemala these are prepared differently and have a very special particular flavor. This recipe or dish is ideal to accompany the main dish at lunch as a garnish or serve as an appetizer before your meals.
The shape is quite similar to the hamburger patty, it is flattened-ball made with potato puree. This recipe can get you out of trouble if you don't know what to cook and you don't have time to go out and buy something else. It is very easy and quick to prepare, these “tortitas” have a soft taste to the palate and a delicious aroma. It is always a good idea to eat something very different from what we are used to from time to time, and it is for this reason that we share this traditional recipe from Guatemala.
- 15 medium size potatoes
- 6 sprigs of parsley
- Water (to cook the potatoes)
- Olive oil
- 4 eggs
- 1 tablespoon of flour
- 1 large onion
- 2 garlic cloves, minced
- Salt and pepper to taste
Step 1 : Place the potatoes in a pot and cover them with water, cook them for approximately 20 minutes or until they are soft. Once cooked, remove the skin from all the potatoes and mash the potatoes with a fork to make a puree.
Step 2 : Finely chop the parsley and onion. Add the parsley, garlic and onion to the mashed potatoes and mix well.
Step 3 : Beat the eggs lightly. Then add flour, salt, peper and the beaten eggs to the mashed potato mixture. The result should be a firm and homogeneous mixture. If necessary, add a little more flour.
Step 4 : Heat the olive oil in a frying pan for a few minutes. Meanwhile, with the dough form small balls and flatten them (similar shape to the hamburger patties), this will look like small “tortillas” (Approximately 8 centimeters in diameter and 1.5 centimeters thick.)
Step 5 : Now you just have to fry each "pancake" and that's it.
You can serve it with a little cheese and chopped parsley on top. It's delicious.
