The traditional "Tostadas Guatemaltecas" (Corn Tortillas Toasts) are very popular. These are basically a snack or appetizer before lunch. This traditional Guatemala snack is quite common during national holidays or just for sharing with the family and friends any time during the day.
There are basically three different versions of Guatemalan toast. Tomato Sauce Toast, Guacamol Toast and Bean Toast. You will realize that the difference between these three recipes is simply an ingredient, but believe me, in the end it makes a big difference. Since the objective of these recipes is to make quick and simple snacks, we will skip the process of preparing the black beans (since it is simple) and I would recommend you to have them cooked beforehand. The same with the tomato sauce. Although for guacamole, it is perhaps better to prepare it fresh.
Here is the quick and easy to follow recipe
1.- In a blender machine, put black beans, onions, ground cumin, garlic and salt and blend.
2.- In a frying pan, put the bean mixture and with olive oil, fry for 5 minutes or until the mixture is very thick.
3.- Fry the corn tortillas until crispy. Then let cool completely.
4.- Spread the black beans on top, add a few onion rings and a little bit of crumbling cheese or “queso fresco” (as known in Guatemala).
5.- Ready to enjoy !
1.- In a saucepan, boil all ingredients including the onion cut into medium size pieces with 1/2 cup of water for about 10 minutes.
2.- Once cooked, blend all the ingredients with a blender-machine.
3.- In a frying pan, place the olive oil and the tomato mixture and fry until the sauce is thick.
4.- Fry the corn tortillas until crispy. Then let cool completely.
5.- Spread the tomato sauce on top, add a few onion rings, a little bit of crumbling cheese or “queso fresco” (as known in Guatemala) and a little bit of chopped parsley on top.
6.- Ready to enjoy !
1.- Extract the pulp of the avocado and place it in a bowl, then with a fork smash the avocado until making a puree, then add the chopped onion, the lemon juice and the rest of the ingredients and mix well.
2.- Fry the corn tortillas until crispy. Then let cool completely.
3.- Spread the guacamole on top, add a few onion rings, a little bit of crumbling cheese or “queso fresco” (as known in Guatemala) and chopped cilantro.
4.- Ready to enjoy !
