Rice with Milk (Arroz en Leche) Guatemalan Dessert Recipe

This is a very traditional dessert from Guatemala, similar to the well known "Atol de Elote". If you visit any market in Guatemala or fairs of the towns and villages in the interior of the country, you will not miss seeing a person selling this delicious and traditional dessert.


Depending on the thickness, this dessert can be taken as a drink, or use it as a delicacy to accompany a cake or fruit. Just like many typical Guatemalan sweets, Arroz en Leche has its roots at the time of the Spanish Colony. We give you the instructions right below, you will find that it is simple and easy to prepare.

Ingredients

  • 1/2 pound white rice (or 1 1/2 cups of rice)
  • 3 cups of milk (some family recipes use evaporated milk)
  • 3 cups of water
  • 1 cinnamon stick
  • 3/4 cup sugar (we recommend brown sugar)
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 2 teaspoons cinnamon powder (for decoration)
  • 1 teaspoon vanilla
  • 1 teaspoon lemon or orange zest
  • 3/4 cup raisins

Instructions

Note : First step, make sure you wash the rice well before cooking.

  1. Cook the rice with the water and place the cinnamon stick. Be sure to simmer it until it is soft.
  2. When the rice is cooked, add the milk, sugar, salt, vanilla and raisins and cook another 15 minutes. Remember to move the mixture to prevent the rice from sticking to the pot.
  3. Then, the mixture is ready to serve. Sprinkle a little cinnamon powder on the "Rice in Milk".

This dessert is very nutritious and raises energy. You can add some cocoa or chocolate powder for a twist to the recipe.

Ready! Now you can enjoy another traditional dessert from Guatemala. Ideal as a drink for cold days, or to complement any dessert at any time of the year.
